Semester

Culinary Arts Program

A 4- 7 week program that allows you and your students to study the art of Asian and Southeast Asian cooking while traveling through 6 different countries (Thailand, China, Malaysia, Laos, Vietnam and Cambodia). You will study in cooking schools designed especially for you! All instruction is in English and will cover the basics from acquiring and preparing ingredients to the cultural meanings behind the various foods and techniques of preparation. Emphasis will be on Thai cuisine (3-4 weeks in Thailand with a 3 week excursion to the other 5 countries) but will cover foods across the region.

Food plays an important role in Southeast Asian culture and the community and also serves as an ethnic identifier. You will notice distinct patterns and variances among different ethnic groups often accentuated by religious geographic differences.

Southeast Asian cuisines are very healthy and fresh. To experience the food of Southeast Asia is one of the most enjoyable ways to capture the uniqueness of the region. Southeast Asian food has some common ingredients that span across both mainland and maritime Southeast Asia such as: lemon grass, coconut milk, palm sugar, Asian basil, mint, cilantro, chili peppers, and exotic local fruits. You will visit colorful food markets and experience the many ways Southeast Asians enjoy their cuisine.
